Kimchi Burger with Tofu & Cashew Mayo 👩‍🍳

Recipe For 2 people.

For the Burger:

2 Burger buns
200-500g Tofu cut into 2 slices (alternatively you can use burger patties)
1 - 2 tablespoons Coconut Oil
2 tablespoons soy sauce
4 tablespoons SUUR Love Craft Kraut: Kimchi Style
8 thin slices of salad cucumber
1 small onion cut into thin rings
A few leaves of fresh coriander and parsley
A good dash of SUUR Sriracha Hot Sauce

For the Cashew Mayo:

100g soy greek yogurt
50g cashew nuts
100ml soy drink
1 tablespoon rice syrup
1 tablespoon medium heat mustard
1 bulb of garlic
Add salt, pepper and lemon juice to your taste

Whip all the ingredients for the cashew mayo in a blender or with a hand blender until creamy and season with salt, pepper and lemon juice.

Heat the coconut oil in a pan and fry the tofu slices on both sides until they are slightly crispy. Add soy sauce and let it cook off. (Alternatively, prepare the patties or patties.)

Bake or toast the burger buns. Spread the bottom half of the burger with cashew mayo. Place tofu slices on top and spread about 2 tablespoons of SUUR Love Craft Kraut Kimchi-Style on top. Top with cucumber slices, onion rings and coriander or parsley and close.

Add some SUUR Sriracha Hot Sauce or SUUR Lemon Sriracha Hot Sauce.
