Recipe For 5 to 6 people
1/2 cup mixed wild rice
1 can butter beans, drained
2 medium sweet potatoes, diced
3-4 tbsp Garlic & Pepper Love Craft Kraut, or Classic Love Craft Kraut
1 small red onion, finely sliced
A Handful of chopped parsley
Sea salt, to your taste
1 batch of massaged kale (recipe follows)
Dressing:
1-2 tbsp mustard caviar or wholegrain mustard
1 tbsp maple syrup
2 tbsp raw apple cider vinegar
2 tbsp cold press olive oil
Sea salt, to your taste
Cook the mixed wild rice according to package instructions.
While the rice is cooking, preheat the oven to 180ºC. Layout the sweet potatoes on the roasting dish, toss in olive oil and sprinkle with sea salt. Place them in the oven and roast for about 25 to 30 minutes, turning them around a few times.
Make the dressing by combining all the dressing ingredients together in a screw-top jar. Close the jar and shake well. Taste and season with sea salt.
Drain the rice if any water remains and leave to cool slightly. Mix with the butter beans. Toss in the roasted sweet potatoes. Mix in the massaged kale, Suur Garlic & Pepper Love Kraft Krait, and chopped parsley. Pour the dressing over the salad and serve immediately.
Massaged Kale
Ingredients:
1 Bunch of Kale, large stems removed and roughly chopped
1 tsp raw apple cider vinegar or lemon juice
1 tbsp Olive Oil
Pinch of sea salt
In a large mixing bowl combine the kale, apple cider vinegar, olive oil and sea salt. Massage the kale using your hands until slightly wilted and soft. This makes the kale easier to digest. Enjoy immediately in the salad.
